Tsolikouri, Gaioz Sopromadze’s Wine Cellar, 2011

This golden amber-coloured wine was made in qvevri according to traditional methods from Tsolikouri grapes grown in the Baghdati micro-zone of Imereti. Aromas of cut apples and ripe yellow sour plums. This is a very strong, strict wine devoid of tenderness. An excellent gastronomic wine with pleasantly high acidity which would go well with dishes ranging from kejera pkhali (kohlrabi leaves with walnuts) or aubergine with nuts to fried fish or chicken. Distinguished by its long, direct and sharp finish.
